Did you know you can make marshmallows from a weed growing in your yard? 👀
It’s called cheeseweed (aka the mallow plant), and those little green seed pods are packed with natural pectin. When you boil them down, they turn into a thick mucilage kind of like a homemade gelatin. Add a little sugar, whip it up, and boom 💥 a fluffy, backyard-foraged marshmallow 🍃

Weeds aren’t always the enemy…sometimes they’re dessert 😏

1 cup green mallow pods
1 cup water
1/2 cup sugar (or honey)
Vanilla extract or pinch of salt for flavor

Instructions:
Simmer mallow pods in water for 15–20 minutes until the liquid thickens into a slimy mucilage.
Strain out the pods and keep the thick liquid.
While still warm, add sugar (and optional vanilla/salt).
Use a hand mixer or stand mixer to whip the mixture for 5–10 minutes until it turns light and fluffy.
Spoon into a dish or mold and let it set. Enjoy as-is or chill for firmer texture.
